Garlic, Onion, Cheese, Potato chip, Cauliflower Soup
This started out as a healthy vegetable soup and ended up as a decedent, delicious, fattening soup puree.
Love it.
3 tablespoons butter
One large diced onion
3 cloves diced garlic
One head of chopped cauliflower
3 to 4 cups of low sodium chicken broth
1/4 teaspoon salt
1/4 teaspoon black pepper
6 slices American cheese
One cup milk
2 large handfuls of smashed potato chips
Saute the onion and garlic in three tablespoons butter till soft.
Add the cauliflower, salt and broth covering the cauliflower.
Bring to a boil till the cauliflower is soft.
Use your emersion blender and puree everything .
Add the pepper, cheese, milk and chips.
Keep stirrin to melt the cheese
Puree again.
Season with more salt if needed
I added the chips because the soup was watery and it needed something to thicken it.
Delicious addition.
