Kale and Arugula Salad
Daphne Oz made a this salad on The Chew and I just tweaked it to my taste.
3 to four handfuls of baby kale.
Only use baby kale because the regular kale is too tough.
2 handfuls of baby arugula
2 diced scallions
One diced apple . I kept the skin on.
1/2 a pomegranate
2 tablespoons crumbled goat cheese
2 handfuls cornbread croutons
Dressing
2 inches of fresh peeled ginger.
Only use the fresh
2 cloves garlic
One teaspoon salt
4 tablespoons apple cider vinegar
3 tablespoons maple syrup
1/2 teaspoon corse black pepper
1/2 cup olive, grapeseed or canola oil
Put the garlic, ginger and salt in the magic bullet and blend till you have a paste
Add everything else and blend well
Add half the dressing and save the rest for your next salad.
This is a very easy salad to put together.
