Poke Tuna Salad

Don’t even think about making this recipe if you don’t buy Sushi grade tuna.

It is so worth every extra penny.

This also should be served as soon as possible because it is raw fish.

2 tablespoons low sodium soy sauce

1 tablespoon lime juice

1 teaspoon rice wine vinegar

1 teaspoon sesame oil

1 teaspoon toasted sesame seeds

1/2 teaspoon red pepper flakes

I pound sushi grade tuna, cut into dime  to nickel size pieces.

1 avocado, cut to the same size as the tuna or maybe a little bit bigger

3 diced scallions

1/2 cup diced cilantro

1/4 cup diced parsley

Lime slices

Pickled ginger

Arugula

Mix the soy sauce, vinegar, lime juice, sesame oil and seeds and red pepper together.

Add the tuna and scallions

Marinate for ten minutes

Add the avocado, cilantro and parsley

Mix very gently

Place on a platter with arugula, ginger and lime slices

Cover tightly  and refrigerate until ready to serve.

You can make rice or a seaweed salad and put the poke on top

I had just a little left over and I stir fried it with spinach. OMG.
