Fast Fried Shrimp

Again, I didn’t feel like cooking.

This is so easy and fast.

Two tablespoons olive oil

3 cloves sliced garlic

Ten large peeled and deveined shrimp

Three tablespoons corn starch

1/4 teaspoon salt

1/8 teaspoon ground black pepper

Two handfuls arugula

Two tablespoons lemon dressing

1/2 fresh lemon

Heat the oil in a  pan.

Add the garlic and cook till golden.

Mix the cornstarch, salt and pepper.

Add the shrimp and coat well.

Place each shrimp in the garlic oil and cook till brown on one side then flip over and cook the other side.

I always stand the shrimp on their side to brown up that one little strip in the middle.

Squeeze 1/4 of the lemon over the shrimp.

Mix the arugula with the dressing.

Add the shrimp.

I added a little hot sauce and some extra lemon.

This took five minutes and was soooo delicious.
