Caprese Tortellini Salad

So this is a recipe I made up because I was using things I had in the house.

It is now one of my favorites.

2 bags of frozen tortellini

Salt for the water

One large package of grape tomatoes

6 cloves of minced garlic

One chopped sweet onion

!/4 teaspoon dried oregano

1/2 teaspoon garlic powder

1/3 cup olive oil plus more for drizzling at the end

2 containers of the mini mozzarella balls

One to two cups of the pasta water

One cup plus more of Italian popcorn or garlic croutons

Sprinkle of red pepper flakes

10 big basil leaves. Use only fresh.

Make the tortellini according to the package directions

Drain but save 1-2 cups of the pasta water

Put the cooked pasta in a large bowl and set aside.

Heat the oil and add the onion and garlic and tomatoes plus the oregano, salt, pepper and garlic powder.

Let this all cook together till the tomatoes burst and are almost brown.

Pour over the pasta

Drain the cheese and pour the balls over the tomatoes

Mix well.

Add 1/2 cup of the pasta water and mix well.

If it isn’t saucy enough add another 1/2 cup of pasta water

Add the fresh basil and some more olive oil.
