Whipped Cauliflower

My Mom could cook anything and make it taste good.

She made peas magical.

One large sliced onion

One tablespoon butter

One tablespoon oil

One drained bag of frozen or canned peas

Saute the onion in the butter and oil till soft.

Season with salt and black pepper

Add the peas

Cook for about four minutes until the peas are cooked

I serve these with whipped cauliflower or mashed potatoes.

Stir Fry Ravioli and Vegetables

This was one of those rare nights I didn’t feel like eating meat.

So I went with my cravings and had a pretty good meal.

1/2 chopped onion

2 cloves chopped garlic

2 tablespoons oil

One large chopped fennel stalk

Two stalks of bok choy

7 sliced mushrooms

One cup water

One bouillon cube

One tablespoon corn starch

1/3 pound cheese ravioli

Boil four cups of water

Add a teaspoon of salt

Pour the ravioli into the pot and stir once.

Lower the heat to medium and cook for 6 to ten minutes.

Drain and set aside.

Heat the oil in a fry pan.

Add the garlic, mushrooms and onion, saute for three to four minutes.

Add the fennel for two minutes then the bok choy.

Melt the bouillon cube in the water and mix in the cornstarch.

Keeping the heat on high, pour the cornstarch mixture into the vegetables.

Stir constantly

The mixture bubbles and becomes a thick sauce.

Add the ravioli and stir fry till everything is mixed.

Thats it and it was pretty good.

This was a regular meal on Friday nights when I was younger.

6 cloves of garlic

2  14.5 ounce cans of diced tomatoes or one can of kitchen ready chunky tomatoes

One teaspoon oregano

1/2 teaspoon salt

1/2 teaspoon red pepper flakes

1 tablespoon sugar

Saute the garlic and oil till the garlic is tan

Add the tomatoes, oregano, salt, pepper and sugar

Let it come to a boil then simmer for ten to fifteen minutes

The sauce should thicken up

Boil one pound of pasta

Drain it well and put it into the tomato sauce.

Let it simmer with the sauce a couple of minutes

Serve with freshly grated cheese.

Sometimes I add capers, olives, or cauliflower

Brocolli with garlic and oil

28 Oct

Broccoli with garlic and oil

Make a lot of this because it goes fast.

This is probably enough for four people but not at my house.

One large head of broccoli or six cups of stems and flowers.

Six big cloves of sliced garlic

3/4 teaspoon garlic salt

1/4 teaspoon red pepper flakes

1/3 cup olive oil

Steam the broccoli in the microwave till it is bright green and still crunchy

Brown the garlic in the oil.

Add the garlic salt and take it off the heat

Add the red pepper

Toss the drained cooked broccoli with the oil and garlic.

Make sure everything is evenly coated with the oil.

Adjust the salt to you’re liking.

The soft brown garlic is almost better then the broccoli.

If you have any leftover you can add pasta and Parmesan cheese or make a delicious omelet with cheese.

I have also thrown the leftovers in a stir fry.
