Creamy Gnocchi Soup

I love this.

It was cold outside and I wanted something warm.

This was it.

I found it on Pinterest from Alyssa Rivers and modified it to what I had in my refrig.

3 Tablespoon butter

One tablespoon canola oil

One large diced onion

One cup diced celery

3 cloves minced garlic

One cup thin sliced carrots

1/4 cup flour

2 cups half and half

3 cup chicken broth

One tablespoon thyme

4 cups fresh chopped spinach

2 cups cooked chicken or pork

One 16 ounce package of uncooked gnocchi

Salt and pepper to taste

Start with melting the oil and butter in a soup pan.

Add the onion, garlic, celery and carrots.

Cook till they are soft.

Add the thyme.

Add the flour and cook for a couple of minutes, stirring often.

Slowly add the chicken broth and stir the bottom often.

Add the half and half

Bring the heat up to medium high.

Cook for another couple of minutes then add the chicken, spinach and gnocchi.

Stir because you don’t want anything to stick or burn.

Reduce to medium heat till the gnocchi are cooked.

Season with salt and pepper

Cooks Note

I thought I took out a package of chicken but it was cooked pulled pork.

I used that and it was delicious.

Always try to use what you have.
