Squash Saturday

Love squash.

This is an old favorite.

I added the fruit for sweetness and the beans for fiber.

Every time I make this, I get so angry because I always buy the fresh squash and then I have to peel and cut it up.

Don’t do that. You will save at least a half hour by paying the extra money and buying the cut up squash. The frozen is too watery.

Butternut Squash Soup

One large  diced onion

Two cloves of minced garlic

Three tablespoon of butter

Three packages of cut up butternut squash

Two large ,peeled and cut apples

One large can of chicken broth. You can use vegetable broth.

1/4 teaspoon ground ginger

!/8 teaspoon ground nutmeg

1/2 teaspoon cinnamon

1/2 teaspoon of salt

One can of washed and drained black beans

0ne cup of half and half cream

Saute the onion and garlic till soft.

Add the squash, apples, broth and seasoning.

Cover the pot and bring to a boil.

Turn down the heat and simmer till the squash is cooked. About ten minutes.

Let cool and pour into your blender in batches and puree till smooth.

Pour back into the pot and add the half and half and drained black beans.

Simmer till hot

Adjust the seasoning and eat.

I serve this with grilled sausage  grinders.
