Sweet Potato Monday
I am one of the old fashion people. I love to read the newspaper.
Every week there is a magazine supplement called Relish.
This is where I got this recipe then changed it a little.
My family loved it
Sweet Potato Salad
4 sweet potatoes, peeled and cubed
2 chopped red onions
2 cups of cubed turnips
One cup of cut carrots
One cup of chopped celery
2 tablespoons canola oil
Salt and pepper
Dressing
2 tablespoons canola oil
2 seeded and chopped jalapenos
one clove of garlic
Juice of two limes
One tablespoon honey
Mix the dressing together in a processor till smooth.
Set aside.
Preheat the oven to 425 degrees.
Mix all the vegetables together with the oil ,salt and pepper.
Spread on a cookie sheet. Do not overlap.
Make two trays if necessary.
Bake for 30 to 40 minutes. Turning once.
Place cooked vegetables into a bowl and add the dressing.
Add one can of rinsed and drained black beans.
Garnish
one diced red pepper
1/3 cup of chopped cilantro
4 diced scallions
Serve at room temperature and watch it disappear.
