Sunday Shish Kabob

All the kids where coming home today and I wanted something easy and delicious.

I always fall back on the old favorites. Today it was shish kabob.

On Friday I cleaned and cubed the pork tenderloin and the marinated it in a real basic dressing.

1/2 cup of olive oil

two big lemons. The juice and zest

four cloves of minced garlic

One teaspoons of rosemary

One teaspoon oregano

One teaspoon salt

One teaspoon of black pepper

Let the meat marinate at least overnight

Thread the meat on to the skewers.

Grill till the meat starts to shrivel then turn.

I like the meat medium

On separate skewers thread onion quarters and big wedges of red pepper.

Season with olive oil, salt and pepper. Then grill.

I served this with a sweet potato salad, greek salad and asparagus.

I also made a new recipe. It was a garlic bread soup.

It was pretty good.
