Friday Filipe

Rosa Filipe nicknamed this the” beggar’s soup ” because it didn’t have any meat. I changed that.

Bread and Garlic Soup with Cilantro

4 cups of chopped cilantro leaves and stems

7 cloves chopped garlic

One large chopped red pepper

One serrano pepper

Salt and pepper to taste

1/2 cup of olive oil

1/2 pound of bread

or two cubed kaiser rolls

8 cups of chicken stock

4 lightly beaten eggs

Two cups of chopped roasted chicken or pork

Pulse cilantro,garlic, peppers, salt and pepper in a processor until it is rough chopped.

Add oil and puree till smooth

Place 3/4 cup of paste into a bowl

Add bread cubes and toss

Set aside.

Heat remaining paste in a 6 quart pan on medium for 2 to 3 minutes.

Add stock and bring to a boil.

Add the meat.

Stir and slowly drizzle in the eggs. About one minute.

Remove from the heat and stir in the bread

Serve with a tossed salad.
