Power Soup
There is a supplement in the Telegram and Gazette that I love.
It is called Relish.
It has some of the best recipes.
Of course, I changed this one a little bit.
Since I have a terrible cold I wanted something healthy.
This soup has Vitamin C, K, calcium, beta carotene, protein and fiber.
It took 40 minutes to make.
One tablespoon olive oil
One chopped onion
3 cloves minced garlic
One cup Farro
8 cups chicken broth
3 cups diced butternut squash
one 14 ounce can of rotelle
one 14 ounce can of diced tomatoes with the juice.
one 4 inch piece of Parmigiano cheese cut into very small cubes
one teaspoon dried thyme
four chicken bouillon cubes
2 cups of baby kale
2 cups baby spinach
Grated cheese on top
Heat the oil
Add the onion and garlic
Cook till soft.
Add the Farro and stir for one minute till everything is coated with the oil.
Add the broth, tomatoes. squash, cheese, thyme and bouillon cubes.
Bring to a boil and then simmer till the farro is cooked.
This takes about 30 minutes.
Add the kale and spinach
Add 1/2 teaspoon black pepper
Cook for another two minutes.
Serve with cheese on the top.
You can add beans, carrots, celery or whatever else you like.
This tastes like a vegetable soup but with the chewy farro.
