Spinach and White Bean Soup
I usually make this as a vegetable but I have a cold and need soup.
Two tablespoons oil
5 cloves of chopped garlic
One pound of spinach
Two can of small white beans, drain half of the liquid
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
Two cups chicken stock
Saute the garlic in the oil till soft, not brown.
Add the beans
Add the spinach and the chicken broth
Season with the salt and red pepper
It is a fast soup with a lot of flavor
