Lettuce Wraps
I love lettuce wraps.
Chicken, pork, beef or fish are all delicious.
Since I am always trying to do things fast this is a great recipe.
Everything can be on the table in 20 minutes.
Cook whatever kind of rice you like.
My family prefers brown rice cooked in the rice cooker.
One package of lettuce wrap mix.
1/4 cup chicken stock
One tablespoon soy sauce
One and a half teaspoon brown sugar or honey
Two pounds of diced chicken
One 4 ounce box of sliced mushrooms
One diced red pepper
6 diced scallions
8 big Boston lettuce leaves
Mix the first four ingredients together and marinate the chicken for 1/2 hour.
Add one tablespoon of oil in a skillet.
Add the mushrooms till just soft.
Take out of the pan.
Add the chicken and let it brown on one side before you start stir frying and moving it .
This takes about 8 minutes but make sure it is cooked .
Add the mushrooms, red pepper and scallions and stir fry for one minute.
Wash and dry the lettuce and put two big scoops on each leaf.
I top it off with hot sauce.
Allow at least two per person .
The rice is on the side.
All the lettuce wrap seasoning mixs are about the same.
I used Sunbird and almost followed their directions.
A couple of changes here and there.
If you want to get fancy make some lomein or udon noodles.
