Mushroom and Goat Cheese Pizza

One pound of pizza dough

One pound of sliced mushrooms

Two sprigs of  fresh thyme leaves about one teaspoon

Two tablespoons olive oil

One diced onion

2 cloves diced garlic

1/2 teaspoon salt

1/4 teaspoon red pepper

8 ounces crumbled goat cheese

Sprinkle of olive oil

Two big handfuls of arugula

Drizzle of balsamic glaze

Preheat the oven to 450 degrees

Grease a pizza pan with a very thin layer os Crisco

Spread the dough out onto the pan to fit out to the pan edges.

Set aside.

Heat a pan with one to two tablespoons olive oil

Add the onion and garlic.

Cook till soft

Add the mushrooms and cook till the liquid is absorbed

Add the salt, pepper and thyme.

Place this mixture on top of the pizza dough

Add the crumbled cheese

drizzle with olive oil

Bake on the bottom shelf for about 15 minutes or until the crust is brown

Take out of the oven and add the arugula and the balsamic glaze drizzle.

I wish I had made two because it disappeared.
