Salmon Vegetable Packets
This is another recipe I found online.
I changed the recipe a little.
This is one of my favorite salmon recipes.
2 eight ounce sockeye salmon fillet
2 cups broccoli florets
2 cups cauliflower florets
1 cup grape tomatoes
4 slices onion
16 green beans
6 brussel sprouts cut in half
8 slices of red pepper
2 tablespoons honey
2 tablespoons soy sauce
1/2 tablespoon sriracha
1/2 tablespoon rice vinegar
1/2 tablespoon olive oil
2 cloves minced garlic
1 inch of fresh ginger, do not use the dried ginger
chives for garnish
Mix the honey, soy sauce, sriracha, vinegar, oil, ginger and garlic in a food processor
Preheat the oven to 375 degrees
Either make foil packages or use individual dishes
Evenly divide the vegetables into each dish or foil packet
Pour one tablespoon of dressing on the vegetables
Place the salmon on top and add the remaining dressing .
Fold up the packets or wrap the baking dish with foil
Bake for 15 to 20 minutes
Top with chopped chives and lemon slice.
You can use any vegetables you like.
I love the packets of mixed vegetables. They make prep time so easy.
I also added carrots, spinach and peapods.
Now I’m getting fancy but I put pickled ginger on top.
The sauce is so good so don’t hesitate to make extra.
Serve with white rice.
