Baked Haddock
This takes fifteen minutes start to finish.
Preheat the oven to 375 degrees
One half pound piece of fresh haddock.
One tablespoon lemon juice
One tablespoon bacon mayonnaise
Eight grape tomatoes
Salt and pepper
Place a sheet of foil on a baking sheet
Pour all the lemon juice over the fish
Season with salt and pepper
Spread the mayonnaise evenly over the fish
Place the tomatoes over the fish
Bake till the fish is flakey about 15 minutes depending on the thickness of the fish.
Spoon the pan juices over the cooked fish.
Serve with rice, green beans and a good salad.
