Spinach Artichoke Grilled Cheese

10 to 12 slices of good bread

4 tablespoons cream cheese

One can of  drained chopped artichokes about one cup maybe a little more. Just use the entire can.

Two cups tightly packed fresh spinach

4 tablespoons shredded mozzarella cheese

4 tablespoons shredded cheddar cheese

4 tablespoons shredded american cheese

4 tablespoons provolone cheese

One large diced onion

One tablespoon butter

Salt and pepper to taste

Melt the butter and add the onions

Cook until the onions are caramelized.

This takes about ten to fifteen minutes.

Soften the cream cheese and mix it with the artichokes, spinach, all the cheeses, salt, pepper and onions

Spread about three  to four tablespoons on a slice of bread.

Cover with another slice of bread

Place a small amount of butter in a skillet.

Place the sandwich in the pan and place a small piece of butter on top .

Brown very slowly on medium low heat then flip over to brown the other side.

The cheese melts and everything else get hot.

I put a teaspoon on a triscuit cracker and baked it in the toaster oven till the cheese melted.

We ate a box of triscuits.

This is too good.
