Spinach, Cheese Soup

Every mistake I try to fix.

This is a great example.

8 cups of chicken broth

3 tablespoon olive oil

3 cloves minced garlic

One chopped onion

12 ounces of brown rice linguine

8 ounces ricotta cheese

One cup half and half

8 ounces of fresh spinach

the zest of one lemon plus the juice

grated parmesan cheese for the topping

Heat oil in a saucepan big enough to hold the 8 cups of broth plus everything else.

Add the onion and garlic

Cook till it is soft

Add the broth and bring to a boil

Add the pasta

Cook till it is aldente

Add the ricotta cheese and mix in well Add the half and half

Add the spinach and stir in

Add the lemon zest and juice

Top with generous amounts of parmesan cheese

Spoon into bowls and enjoy

The broth has to be salted because you are cooking the pasta in it.

This was meant to be a pasta dish but ended up a soup because I added too much broth.

I love it.
