Meatball Monday

You can never make enough of these meatballs.

Four pounds of 90% ground beef

six eggs

1/2 cup chopped Italian parsley

One  cup grated pecorino romano cheese

two cups of seasoned bread crumbs or you can use stale bread.

One grated onion

Four cloves of grated garlic

one teaspoon of salt and pepper

Mix everything together and form into balls. The size of the balls are up to you.

Place them on a lightly greased baking pan and bake in a preheated oven for 35 to 40 minutes. You can tell when they are done but cutting one in half. It should not have any red juices, so this is your opportunity to eat a delicious meatball right out of the oven.

I either put them in my gravy or freeze them without the gravy in freezer bags.

For tonight’s meal………

Put the gravy from yesterday in a pot and heat it up with the meatballs. This can be done on the stove,microwave or crock pot.

Serve with hot Italian bread, grated cheese and fresh shredded mozzarella cheese. Green salad on the side.
