Quick Spicy Shrimp

Be good to yourself and make this immediately.

This recipe made my day.

1/2 cup olive and canola oil mixed

6 big cloves of diced garlic

2 diced shallots

One dried chili pepper broken into pieces or 1/4 teaspoon crushed red pepper

2 diced medium tomatoes

One pound of clean and deveined shrimp 16 to 20 count

1/4 cup good wine, red or white

I had a bottle of Marsala wine opened so I used that.

The zest and juice of one lemon

8 large basil leaves

2 big handfuls of baby spinach

Pour the oil into a saucepan and make sure it covers the bottom of the pan plus at least 1/8 to 1/4 inch in depth. This is the sauce for the shrimp.

Saute the garlic, shallots, tomatoes and pepper.

When this is soft and almost brown add the shrimp and cook for one or two minutes till the shrimp is pink.

Push the shrimp to the sides of the pan and add the wine.

Cook till the liquid has reduced a little and you cannot taste the wine .

Add the zest, lemon juice and basil. Stir every thing together.

Taste for salt but I didn’t think it needed any.

Put one huge handful of raw baby spinach in a bowl

Add half the shrimp with some juice.

Serve with white rice and a glass of wine.

This is so so good.
