Potatoes and Green Bean Salad

This is one of my favorite meals and I could eat all of it plus lick the bowl because the dressing is so good.

1 1/2 pounds trimmed green beans cut into 1 1/2 inch pieces

15 red potatoes, not really big ones and not baby potatoes

1/2 thin chopped red onion

1/2 cup diced parsley

1/2 cup chopped yellow pepper

1/2 to 3/4 cup sliced hot banana peppers

8 hard boiled eggs

Dressing

6 Tablespoons olive oil

The juice of 1/2 a big lemon

6 tablespoons apple cider vinegar

2 cloves of garlic

One teaspoon salt

One teaspoon ground black pepper

2 teaspoons Dijon mustard

Put everything in a magic bullet till it is all mixed together. Set aside

Put enough water in a pot to cover the potatoes

Salt the water

Bring to a boil till the potatoes are fork tender

Take them out of the water

Use the same water to cook the beans

Only cook the beans for about 2 to 3 minutes till they are bright green

Drain the beans and run under cold water to stop cooking

Set aside to drain

Put some dressing in the bottom of a large bowl

Cut and dress the potatoes while they are still warm

Do not peel the potatoes just cut them into 1 1/2 inch pieces

Add more dressing and coat the potatoes well.

Add the green beans, onions, parsley and peppers and mix well.

Add the rest of the dressing and toss gently.

Garnish with the hard boiled eggs

This is so delicious and a fast meal.

Of corse a big chunk of crusty bread with butter would be great.
