Scrambled eggs with garlic, bacon, avocado and spinach

This is my new best breakfast, lunch and dinner.

One clove of thin sliced garlic

One tablespoon olive oil  or butter

3 large eggs

1/4 cup 1/2 and 1/2 milk

1/8 teaspoon salt and pepper

Two slices of cooked  crumbled bacon

One cubed avocado

One large handful of fresh baby spinach

One slice of Swiss cheese

One slice of Americana cheese

Heat the oil and add the garlic

Cook till it is soft

Mix the eggs with the milk, salt and pepper till it is pale yellow

Add the bacon to the pan with the garlic and oil

Cook till it is warm

Add the eggs and start stirring

I just slowly stir my eggs until they are cooked

Put the handful of spinach on top and stir just to combine everything

Transfer everything to a plate

Top with the avocado and cheese

Microwave for 30 to 40 seconds till the cheese is melted

This is excellent.

Adjust your salt and pepper to your liking

I did add just a little hot sauce.

It was so good I didn’t even need a bagel.


Eggs with Cheese Pie

I am lucky enough to have a wonderful neighbor, Maria.

She baked a homemade Greek cheese pie and gave me two big slices.

I ate one immediately and saved one.

I love to play with food and I made myself laugh this morning because

I think I am funny.

2 fried eggs

One piece of cheese pie

2 slices salami

2 scoops cooked mushrooms

First I ate the eyes (eggs)

Then the nose (cheese pie)

Then the  mouth (salami)

Then the mushrooms

This was a great breakfast.




Fried Garlic and Eggs

I just read an article on how good garlic is for you.

So, I am now on a garlic craze and if I say so myself I smell fabulous.

One teaspoon butter

One large clove of thin sliced garlic

3 eggs

Melt the butter

Add the garlic and cook till soft

Crack the eggs on top and cook whatever way you like.

I had over easy because I like yolk.

Place on a bun with a little salt and pepper.


Egg Salad Sandwich

This is so 1950.

My Mom made egg salad all the time.

Then cholesterol was discovered.

Only kidding.

Everything in moderation.

7 hard boiled diced eggs

3 tablespoons mayonnaise

3 tablespoons sweet relish

1/4 diced red onion

1 to 2 stalks diced celery

Salt and pepper to taste

Mix everything together

Put three heaping tablespoons on a nice soft  roll

Add arugula, avocado and sliced tomato on the roll with pickles on the side.

Serve with a delicious soup and you have a great meal.

As PeeWee Herman used to say,”Egg Saladeeee”.


Lucky New Years Day Lentils

Okay I admit it, my mind is filled with old wives tales and mumbo jumbo.

“Don’t walk on a crack”, “Go out the same door you came in” etc.

I can go on forever but eating lentils on new year for good luck is a annual crazy.

I hate to admit it but I have all my kids doing it too.

All six of them have lentils cooking on their stoves as I am writing this.

My husband disliked them so he would eat only one lentil every year to make me happy.

I cooked the Lemon Lentil recipe from the blog last night and put it in the refrigerator.

Lentils have a tendency to thicken up quit a bit.

So this morning I decided to make a Lucky Lentil Bowl.

OMG talk about delicious clean eating.

One big handful of fresh spinach

One handful of leftover pulled pork

Three big scoops of lentils

2 fried eggs

3 forkfuls of caramelized onions

Just put everything on a microwave plate except for the eggs and microwave for 1 to 2 minutes till hot.

Add the eggs and whatever hot sauce you like.

OMG… Now this is the start of a new year.

Lucky Me and now Lucky You.


Zucchini, Egg and Cheese Rollup

This is another leftover treat.

One cup cooked zucchini

3 eggs

2 slices of American cheese

One slice of flat bread

Heat a skillet with just a little butter

Heat the zucchini in the microwave till hot. Drain any liquid off.

Pour the whipped eggs into the hot pan and swirl the pan so the eggs cook evenly.

Add the cheese and zucchini.

Cook for another minute or to the doneness you like.

Place on the flatbread and roll up.

This was pretty good.



Onions and Eggs

My Mom used to make this all the time when I was young.

She would cook the eggs and put it all in a fresh loaf of Italian bread.

Instead of napkins she would give us a cloth dish towel because we had to wipe our mouths so much.

3 tablespoons olive oil, butter or canola oil

3 jumbo eggs

1/2 diced large onion

2 slices American cheese

1/4 teaspoon black pepper

1/4 teaspoon salt

Heat a non stick pan with the oil.

Add the onions and cook till they are soft but not brown

Season with salt and pepper

Beat the eggs and add it to the pan and swirl around, scrapping the edges to make a fluffy egg.

Cook to the consistency you like.

I like my eggs fully cooked.

Slide them onto a microwave dish and place two slices of American cheese on top.

Microwave for 20 seconds to melt the cheese.

I use ketchup and Franks hot sauce on the side but this is so good plain.

I am watching my carb intake so I did not have bread.  I will keep this in mind for my cheat day.

It is not the prettiest meal but it is so very delicious.
