Asparagus, Egg, Grilled Cheese Sandwich

Certain foods remind me of certain people.

This is something my Aunt Rose would always cook for me because she loved asparagus.

This recipe will make two nice size sandwiches.

4 slices of The Cheesecake Factory brown oatmeal bread

4 eggs

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

4 slices American cheese

2 slices mozzarella cheese

2 slices provolone or swiss

12 cooked asparagus spears

One teaspoon olive oil

Two pats of butter

Heat a skillet with the olive oil

Scramble the eggs

Add the garlic powder, salt and pepper

Pour into the heated pan and cook to you liking.

I like mine dry.

Take off the heat.

Place the bread on a plate

Equally divide the cheeses on the bread

Top with six grilled asparagus

Put the other slice of bread on top

Melt one pat of butter in a pan

Put the other pat of butter on the top of the sandwiches

Place the sandwiches in the pan

On medium heat brown the bottom bread then turn over and brown the other side.

Squeeze the sandwiches with a spatula.

Lower the heat to low, make sure the cheese is melted

Don’t leave the stove because they burn very quickly.
