My Favorite Lunch, Warm Tomato Salad

Here I go again.

Never throw away anything.

Leftovers can be the best.

I made a tomato, mozzarella salad and just had about one cup leftover and my favorite lunch was born.

It takes twenty minutes of non work.

The mozzarella salad recipe is the following;

Three containers of grape or multi colored tomatoes

Two containers of mini mozzarella balls, drained

1/3 teaspoon garlic powder

1/3 teaspoon salt

1/3 teaspoon black pepper or crushed red pepper

4 to 5 tablespoons olive oil

12 to 15 good size fresh basil leaves

1/4 teaspoon oregano

Mix everything together and put in a dish with a cover

Now this is ready as a side for anything.

I had a cup left over so lunch was made.

Cover a pie plate with foil

Put the leftover salad in the plate

Heat the oven to 400 degrees

Pull the sides of the foil over the salad

Bake for 15 minutes until the tomatoes start to pop and the cheese os melted.

Throw two big handfuls of garlic croutons on top and bake for another five minutes

The croutons absorb the delicious juice from the tomatoes

Pour yourself some wine, take a fork and napkin and ENJOY.
