Breakfast Sandwich

This is one of my favorite breakfast sandwiches and I have to be honest I can eat them all day.

Two sliced, toasted and buttered bialeys

One avocado, 1/2 on each sandwich

Two paper-thin slices of red onion

Two Handfuls of arugula

Two thin slices of tomato

Four perfectly fried eggs. Make sure the yolk is still runny.

Four slices of crisp bacon

Salt and pepper

As much Franks Red Hot sauce as you like

This makes two sandwiches

Start with the toasted bialey

Butter  the inside of each bialey

Layer 1/2 of the avocado on top and smash down to form a flat surface

Place the onion slice, tomato slice, one handful of the arugula and  two slices of bacon on the avocado

Gently place the two fried eggs on top

Season with salt and pepper and if you want more spice add the Franks hot sauce.

Franks is a staple in my house. I think my kids would drink it if I let them.

This recipe makes two sandwiches because whenever I sit down to eat someone appears to eat mine.

The other day I did eat two, felt too full,  guilty but very satisfied.

A slice of cheese makes this sandwich decadent.

Won Tons

All summer I have been craving Asian food so I have been trying new recipes.

Won Tons are one of my favorites.

This is a simple recipe  that I changed just a little.

One package of Nasoya WonTon Wrappers

One pound of ground chicken, pork or shrimp

Two tablespoons scallions

One small clove of garlic

One tablespoon fresh ginger. Only use fresh.

One tablespoon sesame oil

One tablespoon soy sauce

One egg

1/2 teaspoon black pepper

1/4 teaspoon salt

Two diced scallions for garnish

Place the ginger, garlic and salt in the processor and pulse till chopped well.

Add the diced scallions, egg, soy sauce, sesame oil, salt and pepper.

Mix well

Add to the ground chicken and mix well again.

Lay out all the won tons and place one teaspoon of filling on each.

Wet the edges of the won ton with water, make a triangle and seal it well

Take the two corners of the triangle and seal them together.

Bring two cups of broth to a boil and add ten wontons.

Cook about 5 minutes then let it simmer for 2 more minutes.

The chicken inside the won ton has to cook

Place some pea pods in a bowl and place the won tons with some broth

Garnish with another tablespoon of diced scallion

I freeze these on a cookie sheet than put them in freezer bags to store in the freezer for a very fast and easy soup.

 

Salted Milk Dud Oatmeal cookies

Salted Milk Dud caramel oatmeal cookies

Butter Yum is another website I follow and their stuff is fabulous.

This is their basic recipe with two or three things changed.

Two sticks of softened unsalted butter. Do not use margarine.

1 1/2 cups light or dark brown sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

3 cups rolled old fashion oats

2 five ounce boxes of Milk Duds sliced into four small pieces

10 caramels sliced into four small pieces

One box of mini rolos or pom poms for the top of each cookie.

You can use any chocolate covered caramel you like.

Kosher or sea salt to sprinkle on top of each cookie

Preheat the oven to 350 degrees

Mix the butter and sugar until it is smooth and fluffy

Add the eggs and vanilla

Mix till all is smooth

Add the flour, salt and baking powder

Mix well

Mix in the caramels,  milk duds and the oatmeal

Use either parchment paper or a silpac or else you will never get these cookies off the pan.

Take a rounded teaspoon  of the dough and roll into a ball

Place it in the pan

Flatten it just a little

Add the rolo in the middle of the cookie and sprinkle with the salt.

Place only eight to ten cookies  on each pan because they spread.

I baked my cookies at 350 degrees for 13 minutes and they were perfect.

Do not over cook them.

I am embarrassed to admit that I made two batches in two days.

 

 

 

Caramelized Onion and Cheese Quiche

caramelized onion and cheese quiche

This is a reliable outstanding standby.

One deep dish pie pan. Do not use a regular pie dish because the filling will not fit.

One pie crust, rolled out to fit the dish with a small edge.

6 eggs

2 cups light cream

pinch of nutmeg

1/2 teaspoon salt and pepper

2 sliced onions

Two tablespoons butter

1/2 teaspoon salt and pepper

1/2 teaspoon sugar

3 slices white american cheese

3 slices muenster cheese

3 slices yellow cheddar

3 slices swiss cheese

3 slices Hoffman’s cheddar cheese

Put the onions, butter, salt, pepper and sugar in a pan and slowly caramelize the onions.  This takes at least twenty minutes. Cook them slowly because they will burn and you do not want that flavor.

Heat the oven to 400 degrees.

Place the pie crust in the pie pan.

Layer all the cheese.

Put the onions on top.

Mix the eggs with the cream, salt, pepper and nutmeg.

Whip the eggs very well but not frothy.

Pour the eggs on top of the onions.

Place the pie plate on the bottom rack in the oven.

Bake for one hour or until the pie stops jiggling.

Better to over cook the quiche then to under cook it.

I served this with the BLT Salad, a toasted crumpet and fresh fruit.

It was a pretty good brunch if I have to say so myself.

 

Steak and Eggs

Steak and eggs

My sons love this and once in a while I do indulge them.

One pound of thin sliced steak tips

One tablespoon butter

One tablespoon oil

One large sliced onion

1/2 diced hot pepper without the seeds

8 beaten eggs

Heat the butter and oil in a pan.

Add the onion and pepper.

Saute for two or three minutes

Stir to cook but keep the onions almost raw and crunchy.

Add the meat and cook till medium well.

Season with salt

Add eggs and scramble till cooked.

You can add cheese now if you like.

I decided to be a little healthy and add pea shoots.

The pea shoots took away the guilt of eating beef for breakfast.

 

 

Broccoli Rabe, White Beans, Garlic, Sausage, and Fried eggs

This was a great leftover meal that turned into one of my favorites.

Now I make all the ingredients just to eat it.

4 cloves of garlic

8 tablespoons of olive oil

One 16 ounce bag of frozen broccoli rabe, defrosted and squeezed dry.

One can of drained small white kidney beans

3/4 teaspoon salt

1/2 teaspoon crushed red pepper

One pound of crumbled sausage

Two fried eggs for every serving

Dash of hot sauce

Heat the oil

Add the garlic and cook till slightly brown

Add the broccoli rabe, salt and pepper.

Cook for about five minutes.

Add the beans and cook till all the liquid is almost evaporated.

Take off the heat and adjust your salt.

In another pan crumble the sausage and cook till brown and well done.

Drain on a paper towel.

In the same frying pan fry two eggs. I like mine flipped over to really cook the whites.

Place four heaping tablespoons  of the bean and broccoli mixture in a bowl

Add three to four tablespoons of crumbled sausage

Top with the two fried eggs

Drizzle some hot sauce if you like.

I felt so healthy after I ate this.

I rewarded myself with peanut M&Ms.

 

Orange Poppy Seed Bread

Orange Poppy Seed Cake

This is a takeoff from the Pillsbury Orange-sicle Cake Mix.

I have made it a dozen times and it never lasts long.

One package of Pillsbury Orange-sicle Cake Mix.

One 6 once container of orange flavored yogurt

2 eggs

One tablespoon orange zest

1/2 cup vegetable oil

1/2 cup orange juice

2 teaspoon poppy seeds

Preheat the oven to 325 degrees

Grease a 9 x 5 pan with  a non stick cooking spray

Mix everything together and beat for about two to three minutes.

Pour into a pan and bake for 60 minutes until the center is baked.

May need another five minutes depending on your oven.

You can frost this with orange frosting but I prefer it plain.

This is almost the same recipe that is on the back of the Pillsbury box but I use this as a flavored bread instead of a cake.

I like having different kinds of bread especially when I serve a salad for lunch. I serve lemon, pumpkin, carrot pineapple, zucchini and now orange poppy seed.

It freezes great.
