Holiday Monday

Today is Columbus Day and I am having company for dinner. So much fun.

The menu is  gnocchi with a chunky tomato caper spicy sauce., baked chicken, zucchini carpaccio and a big salad.

Cookies and gelato for dessert.

This is the zucchini carpaccio recipe.

4 zucchini, sliced into paper thin srips

salt and pepper

olive oil

one lemon- juiced

zest of half the lemon

8 basil leaves, chopped

2 scallions chopped thin

thin ribbons of romano cheese

optional toppings are ricotta cheese, prosutto ham slices or goat cheese

Place zucchini on a platter like a roof shingle. One on top of another

sprinkle with salt and pepper

just drizzle a little oil and pour the lemon juice on top with the zest

put all the toppings on and refrigerate for a couple of hours.

If anything is left over add  to an omlette and use the oil and lemon juice for a salad.

Never waste anything. This is so light and delicious
