Tasty Tuesday

Gnocchi with spicy sauce.

This is a fabulous dish. Tasty, fancy and easy.

I never make enough because you can’t stop eating.

Great as a main dish or a terrific side.

This is what I made on Monday night and it was so good.

2 packages of dried gnocchi

one large can of diced tomatoes plus one small can of diced tomatoes

one can of Rotelle tomatoes, this is a diced tomato with green chilies

one  chopped onion

four cloves of minced garlic

six tablespoons of olive oil

two tablespoons of sugar

four tablespoons of capers with the brine

one container of small mozzarella balls, drained

eight basil leaves

Heat oil in a heavy saucepan

Saute onion and garlic till soft

Add all the tomatoes, sugar, basil and capers

Bring to a boil then simmer.

Boil water in a big pot. Add salt and cook the gnocchi. When the gnocchi  floats to the top of the water, test one. They should be cooked. Remove with a slotted spoon and put into the sauce. Let the pasta and sauce cook together for about five minutes.

Take off the stove and add the mozzarella balls. Pour into a platter . Top with romano cheese.

Serve in bowls or as a side dish.

This all takes about 30 minutes and so well worth it.
