Eye of the Round Roast
I’m babysitting this week and I have to keep things simple.
Nothing is easier than throwing something in the oven.
How did I raise six kids and make all those fancy meals?
Now I watch two grandchildren and find it hard to boil a hotdog.
So I decided to meal plan and bring everything with me.
Tonight I made an eye of the round.
Start with a disposable pan.
Season the meat with salt and pepper and add a pat of butter on the top and bottom.
Preheat the oven to 425 degrees.
Put a meat thermometer in the meat.
I cook this kind of meat to rare because it is tough when it is well done.
Slice paper thin.
This makes a great sandwich. Use the dripping for a sauce.
Easy for little ones to chew if it is not overdone.
I served this with buttered noodles and steamed broccoli.
Rolls are a must….
So is the chocolate pudding for dessert.
What are grandmas for?
