Spicy Stirfried Mussels
I love mussels but they are so time consuming to eat.
Then I always get a shell or grit and the meal is over.
Today I found frozen mussel meat at the store without the shells.
Of corse they where on sale so it was a given to buy.
Melt one tablespoon of butter
Saute a large chopped shallot
When that is soft
Add ten sliced grape tomatoes
Saute everything together
Add one teaspoon garlic powder
Add one teaspoon black pepper
Add 1/2 teaspoon salt
Add 2 cups of the mussels
Stir fry till the mussels are cooked and all the water has evaporated
Take one large handful of fresh spinach and place it in a dish
Garnish with carrot slices and 2 tablespoons fresh parsley
Drizzle with the juice of 1/4 lemon
This took all of ten minutes to cook.
It is so delicious and I don’t feel like a fat pig enjoying it.
The nice thing it that I still have a 1/2 bag of mussels in the freezer for tomorrow.
