Baked Potato Soup
I started making this soup because I had a ton of potatoes and milk that I had to use.
1/2 pound of diced bacon
2 diced onions
5 cloves of garlic
3/4 gallon milk
10 cubed potatoes
3 to 4 tablespoons powdered chicken stock or bouillon cubes
Crisp the bacon and set it aside
In the same pot saute the onion and garlic till soft
Add the milk, potatoes and chicken broth
If you are using new or red potatoes you really don’t have to peel them but you do have to peel regular potatoes.
Bring to a boil
Then turn down the heat to low and simmer until the potatoes are soft.
Be careful not to burn the bottom of the pan so make sure the heat is low.
Stir often
Let the soup cool
Pour the soup in a blender or processor and blend till smooth
Do this in batches so it doesn’t make a mess.
Sometimes I throw some cheese into the soup.
Top with the bacon.
I make a grilled cheese or steak sandwich and dunk it into the soup.
