Shrimp Panzella Salad

This is a combination of my refrigerator leftovers.

I had eight jumbo shrimp from the shrimp cocktail.

I made a tomato , bread, and onion salad and ate half but I will give you the whole recipe.

One tablespoon mayonnaise.

Juice of 1/4 of a lemon

8 slices of french bread cut into cubes the same size as the shrimp

Two big handfuls of arugula

Cut the shrimp into bite size pieces or larger

Mix with the lemon juice and mayonnaise

Set aside

Take one container of washed grape tomatoes and cut them in half

1/2 diced small onion

1/2 teaspoon oregano

1/2 teaspoon garlic powder

1/2 teaspoon salt

4 tablespoons olive oil

6 basil leaves

Mix everything together and squish the tomatoes just a little

Add the cubed 8 slices of french bread

Make sure the bread absorbs the tomato juice and oil

Take half of the tomato salad and put it aside.

Take the other half and add it to the shrimp

Mix well

Place everything over the arugula

This is too good

What a great leftover and now you still have 1/2 the tomato salad to eat later.
