Raw Mushroom Salad

I have made this salad two times this week.

I love it.

The first day is my favorite because the mushrooms don’t have a chance to marinate in the dressing.

It is still delicious on day two.

1 1/2 pounds of thin sliced white mushrooms

4 diced celery stalks including the green tops

One diced large red pepper

One cup sliced hot banana peppers plus 1/3 cup of the peppers vinegar

One box of red or orange tomatoes

One cup pitted black olives

One bunch of chopped Italian parsley

10 chopped basil leaves

1/2 cup capers with the brine

One container of tiny mozzarella balls

One cup shaved parmesan cheese

One cup lemon garlic dressing

Mix everything together.

So good.
