Coconut cod fish sandwich
Go to the fish store and buy two coconut cod fillets.
Place on a cookie sheet and bake for 20 minutes at 375 degrees.
I like mine really crispy so sometimes it cooks longer.
Handful of arugula
2 chopped scallions
One slice of Hoffman cheddar cheese for every sandwich
siracha mayo, regular mayonaise or tartar sauce
Pickles on the side.
Bake the fish and cut each fillet in half.
Slice the bread
Spread half with tartar sauce and the other half with ketchup
Place the fillet on the bread
Put the cheese on the fish
Top with arugula, scallions and the other half of the bread.
Sometimes I add cole slaw, avacado and hot sauce on the sandwich.
Who needs a fillet of fish from McDonalds?
