Carols Chicken Soup
When my friend Carol and I get together we talk about food, food, diets, family, food and world peace.
She is one of the best cooks around.
While we were eating and talking about diets she gave me this recipe.
I love it.
One cup of semolina flour
2 eggs
One handful of grated Italian cheese
Two or three tablespoons diced parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
Mix everything together and form a ball
Chill for an hour
Take out your box cheese grater and using the large hole size grate the dough.
It looks like tiny asymmetrical pieces.
Spread out on a cookie sheet and let dry for a couple of hours.
Make your chicken soup and keep it simmering.
Drop all the dough pieces into the soup.
It only takes a couple of minutes to cook.
This is a rice like pasta that has a lot of taste and a little chew.
This dough can be made ahead of time and just keep refrigerated.
It is so good and something different.
