Onion Pancakes

I have made this recipe three times and every time I eat too many.

You can make them small (1-2 teaspoons) for appetizers or 1/4 cup dollops for larger ones.

I make the big ones because they are faster and I am a big eater.

1 cup all-purpose flour plus 2 tablespoons more

2 teaspoons white sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 1/2 cups chopped onions. I used the bag of frozen onions

1 cup milk

1/2 cup canola oil

Mix all the dry ingredients together.

Add the onions

Add the milk and mix well

Heat the oil

Drop the batter in the oil and make the size you want.

Add more oil if you need it

Drain the cooked pancakes on a paper towel

Sere with hot sauce, ketchup, sour cream or applesauce.

I LOVE these light pancakes and they take only 20 minutes.

Keep warm in a low oven.
